Balsamic Salad Dressing

1 part good quality balsamic vinegar 2 parts oil (canola and/or extra virgin olive oil)
salt and pepper to taste lime zest (optional)
 

If using food processor, put vinegar in bowl, cover and start food processor. With the food processor running, slowly pour the oil into the bowl. Once the oil & vinegar are combined add salt and pepper and pulse to mix. If the dressing seems a bit flat add a bit of lime zest and pulse again.

 

You can add herbs or garlic to this to create your own variations.

 

Use as a salad dressing, marinade for grilling veggies, or for meat - works well on pork.
